Ingredients:
50g onion, finely chopped
2 tbsp Oil
100g baby rice
100g finely chopped butternut squash (rich in Vitamin A)
boiling water (or baby stock optional)
75g red or yellow finely diced pepper
75g mushrooms finely chopped
75g frozen peas
50g Cheddar cheese, grated (for a calcium boost)
Method:
Saute the onion in oil until softened.
Stir in the rice until well coated.
Add mushrooms, peppers and butternut squash and cook for a couple of minutes stiring to prevent sticking.
Pour over the boiling water, to cover and cook until the vegetables have soften, add more water if necessary drop by drop and stir to avoid sticking.
when the vegetables have soften add the peas and cook till soft, make sure all of the water has been absorbed.
Finally add the cheese stir to a creamy consistency.
Serves 4
This recipe is suitable from 9 months and the vegetables can be changed to suit you toddlers make it using their favourite veg, for adults use bite size veg and an arborio style rice and season to taste remember do not add salt to baby and toddler meals.
